Raw Satay Pad Thai .... and wellness tips w/ Chloe from Mojo Mecca

This is the first recipe video ever made! Wow, what an honour it was to make this video with a women I deeply respect, admire and hold in high regard  - Chloe Slattery from The Mojo Mecca 

In this video I share my passion for organic, live, real nutrition. I share what I believe "nutrition" is - beyond diets, dogma, regimes. Nutrition to me is taking light photons into the body through eating crazily fresh organic produce, grown locally, free of pesticides and still growing whilst you are eating!

The word Nutrition translates to this : "Nut" means "light" and "rition" means "process". So nutrition is a processing of light. The closer we can get to light - that force that makes plants grow - the better nutritional resources we will find.

HEALTH starts with the process of creating a meal and then pausing to give thanks and appreciation. Whatever "diet" you choose, remember this:  pause and allow your body to be fully present prior to eating. Smell your food, activate saliva to produce enzymes to break down food for digestion. 

"My favourite thing to do is to PAUSE and admire, the colour, texture, aroma and really SEE the food on your plate. Becoming completely present. Visualise the food that was pulled from the earth, grown by dedicated farmers, fuelled by sunlight, air, soil and love.. then prepared by you or others.. and now it is too become you... your skin, hair, sight, your lungs, your liver, your heart etc.."

ANY FOOD CAN MAKE YOU "FAT" or become toxic if you are not present.

If you consume food feeling "bad" or holding onto negative emotions, these emotions can store in your body as adipose tissue = fat. These emotions get tangled up in digestion and become buried, and can continue to be suppressed in this way.

So, if you someone like ME
(yes.. I am not perfect) and often go towards food for comfort when frustration, anxiety, depression arrives;

STOP and BREATHE

If you choose to continue to eat that is OKAY. But only if you stop, breathe, and witness if this is going to serve you and be effectively digested.

If you choose to continue, do so, with love, reverence and respect.

Raw Satay Pad Thai 

Want exact measurements?? Leave me a comment below if so, and I will make it again and write down all measurements.. xx More than happy to do this xx

Satay' Sauce:
- Cashew (or almond) Butter
- Fresh Ginger
- Fresh Turmeric
- Red Onion
- Coriander Root (use the leaves for garnish and mix through at the end)
- Maple Syrup (or honey)
- Olive Oil
- Tamari
- Chilli (or cayenne pepper)

Pad Thai:
- Kelp Noodles (soaked in hot water to soften)
- Spiralized Zucchini / Carrots (can use beetroot too)
- Fresh Coriander + Parsley
- Black Sesame Seeds
- Sunflower sprouts (or any other sprouts you have!)

Massage sauce with dry ingredients + top with:
- Chopped cashews/almonds
- More sprouts + sesame seeds
- Edible Flowers (for extra beauty)
